Spice Up Dinner With This Tasty Raspberry Chipotle Ribs Recipe
Are you tired of the same old hotdogs and hamburgers in the summer dinner routine, we have good news for you! We want to make it possible for you to take a summertime classic—ribs—and give it your own spin. So you can spice up your meals, here is a unique and delicious recipe from our very own in-house chef (and Estimator) Pat Seefeldt.
Try this fun and flavorful raspberry chipotle ribs recipe the next time you want to mix up your dinner routine!
To make it, you will need:
- As many slabs of ribs as you like!
- ¼ cup of brown sugar per slab of ribs
- 2 tablespoons of ground garlic
- 2 tablespoons of ground onion
- 2 tablespoons of ground mustard
- 1/8 cup of paprika
- Salt and pepper to taste
- 8 ounces of raspberry jam
- ¼ cup of barbecue sauce
- 1/8 cup of brandy
- 1/8 cup of chipotle
Preheat your oven to 240 degrees Fahrenheit.
In a large mixing bowl, combine the brown sugar, garlic, onion, mustard, paprika, and your preferred amount of salt and pepper. Rub this dry rub mixture onto each side of each slab of ribs.
Place the ribs bone-side down on a cookie sheet that has edges. You will want these edges to keep the juices from running over and into the oven. Cover the cookie sheets with aluminum foil and bake for two and a half hours.
Meanwhile, combine the jam, barbecue sauce, brandy, and chipotle in a medium saucepan. Simmer over low heat for 20 minutes.
Remove the ribs from the oven and let them cool. This step is important or you will find your ribs falling apart on the grill! Preheat your grill.
Coat one side of the ribs with your raspberry chipotle sauce. Grill until browned, then turn and apply sauce to the other side. Repeat until the sauce is caramelized.
Serve fresh off the grill and enjoy!
